environment: Define 'GUIX_ENVIRONMENT'.
* guix/scripts/environment.scm (create-environment): Define 'GUIX_ENVIRONMENT'.
* doc/guix.texi (Invoking guix environment): Document it.
* gnu/system/shadow.scm (default-skeletons): Adjust 'PS1' depending on whether
'GUIX_ENVIRONMENT' is defined.
